Apple Cinnamon Protein Cookies

Ok, let me preface with this...these are gluten free, dairy free and free of added sugar. In cookieland, that means that the chances of a choir of Angels breaking out in song when you take a bite are slim. If you're feeling rebellious, you could add a touch of brown sugar (2T) or a drizzle of maple syrup to kick them up a notch.


That said, they aren't bad. They taste a lot like baked oatmeal and pack a healthy punch of protein and fiber, while being a heck of a lot faster to grab than a bowl of oatmeal.


Now, on to the recipe...


Ingredients:


1 1/2 C Rolled Oats

1/4C Sliced Almonds

2 Scoops Vanilla Protein Powder (I use Orgain brand's vegan vanilla)

2T Ground Flax Seed

1T Chia Seeds

1T Cinnamon

1/2t Salt

1 Apple (Medium, diced)

1/2 C Unsweetened Apple

1/2 C Egg Whites


Instructions:


Preheat oven to 350°


Combine all ingredients in a medium bowl, stirring until well blended. Use a small scoop (about 2T) to place on a parchment lined cookie sheet.


Bake 15 minutes or until firm. Store in airtight container in refrigerator. Recipes renders about 16 cookies.
