Hey Friends! Looking for a cozy and delicious soup that will keep you on track? I got you! This big pot of yummy will keep you fueled and content through these cold snowy days.
I used low GI veggies and skipped the gluten and dairy to make it work for any day if you are following the FASTer Way or just looking for a healthier soup option.
Ingredients:
2lbs. Boneless skinless chicken breasts
1/2C diced sweet onion
3 cloves minced garlic
1C chicken stock, broth or veggie stock
1Qt. Vegetable stock (low sodium)
1Qt. Chicken bone broth
2t ground turmeric
1t salt
1/2t pepper
1 can (15oz) petite diced tomatoes
1 yellow or orange bell pepper diced
2C chopped spinach
2C chopped broccoli
10oz. Frozen cut green beans
*optional package frozen cauliflower rice
Instructions:
In a large crock pot, lightly spray olive oil cooking spray or drizzle olive oil. Add diced onion, garlic. Top with chicken breasts, season and pour stock around and cook on high 4 hours until chicken shreds easily.
Once chicken is fully cooked and shredded, add frozen and fresh broccoli, green beans, bell pepper, cauliflower rice and stock, as well as seasonings. Cook until veggies are softened and broth is hot.
Once fully cooked, stir in spinach to wilt.
*This soup can easily be made stove top too! Simply pre-cook chicken as instructed above (or use a rotisserie chicken) and do the rest in a pot on the stove. Takes about an hour stove top.
