Copycat Chipotle Steak Burrito Bowl

This recipe includes some convenience focused shortcuts, as well as homemade elements. Hope you enjoy!


Ingredients:


1C sautéed bell peppers and onions (I use red onion and cook in avocado oil)

6oz. fully cooked steak strips (I used John Soules Angus Beef Fajita strips from Sam's Club)

1/4C prepared guacamole (feel free to make your own if you choose)

1C cilantro lime cauliflower rice* This is the star of the show


Here's what you'll need to make your own cilantro lime cauliflower rice:


1 package fresh riced cauliflower

2T avocado oil

zest of 1 lime and juice of 1/2 lime

1/4 fresh chopped cilantro

1/2t cumin

1/2t chipotle chili powder

salt and pepper to taste


1. Begin by heating a large skillet over medium high heat. Once hot, add 2T avocado oil.

2. Add riced cauliflower, season and stir to coat in oil and blend seasoning.

3. Cook until tender (approximately 10 minutes)

4. Stir in lime juice, zest and cilantro immediately prior to serving.
