25 Minute 1 Pan Power Bowl

Quick, delicious and minimal pans to wash after? Sign me up! I'm a fan of power bowls in general but this one is headed to the top of my list.


- 1 sweet potato peeled and diced

- 1C sweet onion sliced

- 1 red bell pepper sliced

- 2 C broccoli florets

- 8 oz. raw, peeled and deveined shrimp

- 2 C spring mix

- 1 C quinoa, brown rice or other grain of choice (I use seeds of change brown rice and quinoa blend)

- salt, pepper, garlic powder to taste

- olive oil

- drizzle of Garlic Expressions dressing or vinaigrette of choice


- Preheat oven to 400°

- Place all prepared vegetables and shrimp on a parchment lined sheet pan, drizzle with olive oil and season to taste

- Bake 25 minutes

- Create a bed of spring mix and top with prepared rice or grain of choice (I use the 90 second rice mix listed in the ingredients section)

-Top with cooked vegetables and shrimp

-Drizzle with Garlic Expressions vinaigrette or other dressing of choice
