Trail Mix Energy Bites

The best and worst things about my office is the coffee shop in the main lobby. Having access to awesome healthy options like energy bites and açaí bowls is amazing for my tummy but is not reasonable an everyday option, which has led me to get creative and try my hand at my own versions of my coffee shop favorites.

After making a copycat version of their energy bites for a while, I decided to try a new version that pulls in the flavors of trail mix.

  • 2C rolled oats

  • 1C crunchy natural peanut butter (no added sugar or oil)

  • 1/4C raw honey

  • 1/3C raisins

  • 1/3C mini m&m (1 tube)

  • 1/3C sunflower seeds

  • 2T chia seeds

  • 2 scoops unflavored collagen peptides

  • 1t ground cinnamon


Mix until well combined and roll into balls. Makes approximately 2 dozen 3/4oz balls.

*For softer bites, use quick oats rather than old fashioned.

*feel free to add ground flax seed or protein powder. If you do add, increase peanut butter and honey.
